Peach and Yam Lunch

This is filling and so delicious. 
Inspired by Rip Esselsytn, the Engine 2 Diet.
Serves two.  Total time is about 15 minutes.

 

Gather:

Orange         peach, yam or sweet potato

Green           avocado, parsley, lime

Black            black beans

 

Bake the yam the day before. Rinse the beans before cooking.

 

Chop:

half of the yam into a large frying pan.

the parsley, half a fresh peach and half an avocado into a small bowl.

 

Pan:

Warm yam and 1/3 can of black beans, add seasonings.
Cook on medium heat for about 3 minutes.

 

Serve:
Arrange the contents from the bowl.

Drizzle fresh squeezed lime juice from half a lime.
